The Bestest Ever Banana Bread!

This is my all time favorite banana bread recipe!  Again, it is from the cookbook that my wonderful friend Becca gave us for our wedding :)  I make banana bread quite a bit and haven't made any other banana bread recipe since I came across this one!  It is perfect!  The secret ingredient is the sour cream.  It keeps the bread really moist and wonderful!  Hope you enjoy it!  P.S. Don't worry if you have a picky eater in the family, my husband hates sour cream, but loves this bread!


Ingredients:
  • 1 cup sugar
  • 1/2 cup oil
  • 2 eggs
  • 2 medium mashed bananas
  • 1/2 cup sour cream (or you can substitute plain yogurt)
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
Directions:

Preheat oven for 350 degrees.  Grease and flour a 9x5 loaf pan.  Beat sugar and oil together.  Add eggs, bananas, sour cream, and vanilla.  Blend well.


Add flour, salt, and baking soda. Stir until moistened.  Place in mixture in bread pan.


Bake for 50 to 60 minutes or until toothpick inserted in the center comes out clean.  Enjoy!! (This batch was a little over done.  I was doing laundry in the other room and didn't hear the timer!  So that is why it looks a little brown in the pictures, but still tastes great!)
