Saucy BBQ Chicken

I am an Aldi lover!!  They are always putting their meat on sale for 1/2 off, so my freezer lately has been stocked with lots of chicken!  There for I am always looking for yummy chicken recipes.  I found this on in my collection the other day and decided to try it out last night.  It was definitely a success!  This is a really quick and easy dish, the hardest part of the whole meal was washing the broiler pan afterwards :)  Enjoy!





Ingredients:

  • 8 chicken drumsticks
  • 1 onion, cut into 6 slices
  • 1 cup ketchup
  • 1/4 cup molasses (I didn't have this on hand, so I substituted dark corn syrup)
  • 3-4 Tbsp. cider vinegar
  • 2 Tbsp. packed brown sugar
  • 1 tsp. paprika
  • Several dashed bottled hot sauce (optional)
Directions:

  1. Preheat broiler.  Broil chicken on unheated rack of broiler pan, 4 to 5 inches from heat, for 10 minutes. 
  2. Lightly brush onion slices with olive oil.  Remove pan from oven.  Turn and move chicken to one end of pan.  Place onion slices, in single layer, on opposite end of pan.  Broil 15 minutes or until chicken is no longer pink and juices run clear.  (Note: We are not huge onion fans, so I just cooked 2 slices of onions to put in the sauce.)
  3. Meanwhile, in saucepan combine ketchup, molasses, vinegar, brown sugar, paprika, and hot sauce (if using).  Bring to a boil over medium heat.  Reduce heat and keep warm. 


     4.   Remove chicken from oven.  Chop up two of the onion slices and place them in your sauce.  
     5.   Coat the chicken in the sauce.  Place back in the oven and broil for 1-2 more minutes.


That's all!  The original recipe says you can then serve the chicken over the left over onion slices, however we left this part out.  We had some sauce left over, so we used it to dip our chicken in.  I like things extra saucy :)  

Dawson was sad that he doesn't get to eat yummy food like this yet, but he seemed to like his cereal mixed with some plums!

  1. My new favorite thing to do with chicken! I love stocking up on meat at Aldi, too! I once got whole chickens for $2. They needed to be used or frozen by the next day. Awesome! I pinned you, girlie!
