Buffalo Ranch Chicken Sandwich

If you are looking for a good, easy dinner, this recipe is for you!  I made this last night and it is a keeper :)  Enjoy!

Ingredients:

  • 6 boneless, skinless chicken breasts (frozen)
  • 1 cup buffalo wing sauce
  • 1/2 package ranch salad dressing mix
  • 1 to 3 tablespoons of butter
Throw the chicken breasts into your crock-pot still frozen.  Pour the buffalo wing sauce and ranch mix on top (I used Sweet Baby Ray's buffalo wing sauce.  You can use more or less sauce, depending on how saucy you want it).  Cover and cook on low for 6 hours.  Uncover and shred chicken.  Add a little butter and cook for one more hour (I didn't use much butter, just because I didn't want to add a lot of fat!).   I then put butter on some sandwich buns and toasted them.  We topped the buns with the buffalo chicken, some mozzarella cheese, and some ranch dressing!  Super yummy and easy meal that is husband approved :)

8 months old!

Another month has quickly gone by!  Our baby is 8 months old today :)

Here are a few of the things that Dawson has done in the last month:
  • Easily puts the paci back in his mouth
  • Likes to "bonk" heads with people
  • Loves to stand up by himself while holding on to something
  • Scoots around on his tummy (moves backwards, to the side, and in circles, but hasn't figured out how to go forward yet!)
  • Had his first sickness :(
  • Went on his first long trip
  • His second tooth came in
  • Loves to touch faces
  • Started feeding himself
  • Loves to babble things like "da da da"
  • Lets us know very clearly what he does and doesn't want!
  • Still LOVES LOVES LOVES people :)
In honor of being 8 months old, he got to sport his first mohawk!

Each month picture taking gets harder and harder!  Dawson just loves his bear I guess :)  Here are a few of the pictures that didn't make the cut!

As you can see in the last picture, he was DONE with the camera by this time :)

Colorado, Sickness, and the State Fair

So, this has been one crazy week!  Last weekend we made a trip to see Brandon's family and Dawson got to visit the State Fair for the first time! Dawson had a great time at the fair, but it really wore him out!

Then, Monday evening we started our adventure to Colorado Springs.  Brandon needed to go to Colorado with his company to work on a few roofs, so we got to tag along!  The trip was great!  We got to stay with some really amazing friends of ours and just live life together :) Dawson and I got to hang out, while Brandon worked most of the time, but we did get to do a little exploring on Saturday once all the work was done!  The downside to the trip, however, was that Dawson got a really bad cold the very first day :(  He couldn't sleep because his nose kept stuffing up and he wasn't his normal happy self for part of the time.  Since it was the first time my baby was ever sick, I was kind of a mess, but he is starting to feel a little better!  Praise the Lord!  Sick babies are no bueno.

Us and the Mathews!  We have missed this family!  Thanks for letting us stay with you!

 Eli and Dawson playing!

However, sometimes they didn't play together very well! (This pic cracks me up!)

The roofing crew grabbing some lunch.

All the kiddos on the trip :)

We got to visit a really neat farmer's market with some good friends!

Visiting Garden of the Gods!

The week was packed with lots of fun, traveling, sickness, new adventures, kiddos, and fellowship :) We had a great time, but are glad to be back home!

Cousins!!

We went back home this last weekend for my step grandpa's 90th birthday celebration!  It was a great weekend with the family :) While we were there, we took some pictures of the four little cousins!  They are all sooo adorable!  I can only imagine all the fun/trouble these boys will get themselves in to when they get bigger!  We did several takes of this picture...here are a few of them :)
